This Mexican pie uses the same homemade dough as our traditional meat pie, but with a colourful, slightly spiced and vegetable-filled filling.

For homemade pie crust

  • 3 cups of flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tablespoon of brown sugar
  • 1 cup of vegetable shortening (or half vegetable shortening and half butter)
  • 1 cup of liquid (half milk, half water)

For the Mexican garnish

  • 2 tablespoons of olive or sunflower oil
  • 2 finely chopped onions (or ¾ cup)
  • 1 red bell pepper, diced (or ½ cup)
  • 2 finely chopped celery stalks (or ¾ cup)
  • 1 lb lean ground pork
  • ¾ lb of lean ground beef
  • ½ cup chili sauce (or more)
  • ¼ cup of ketchup (or more)
  • 1 tbsp Tex-Mex seasoning ( or a homemade spice blend including: paprika, cumin, garlic, onion, coriander, oregano and a little cayenne pepper.)
  • 2 diced tomatoes OR 1 can (398 ml) drained
  • ½ cup of shredded Tex-Mex cheese
  • Egg yolk for glazing
