Ingredients :

500g Swiss chard (use both green leaves and stems for maximum flavor and texture)
400 ml of good quality coconut milk for smoothness and richness of taste
The juice of 2 limes, to provide freshness and balanced acidity
1 small green pepper ( jalapeño) , finely chopped (adjust according to your spiciness tolerance)
1 clove of garlic, minced, for an aromatic base
1 medium onion, finely chopped, adding subtle sweetness
1 tablespoon of olive oil or coconut oil, to brown the aromatics
Salt and freshly ground black pepper, to taste
Fresh coriander and a few mint leaves, to garnish and add an explosion of freshness
Optional: diced mango or avocado to garnish, offering a sweet or creamy touch

Preparation :

Prepare the vegetables: wash the Swiss chard, separate the leaves from the stems and chop them.
Heat the oil in a large saucepan over medium heat. Add the chopped onion and garlic and sweat them.
Add the Swiss chard stems and cook for a few minutes. Then add the leaves until they are wilted.
Transfer the mixture to a blender, add the coconut milk, lime juice, and green pepper. Blend until you get a smooth soup.
Taste and adjust seasoning with salt and pepper.
Let the soup cool to room temperature, then refrigerate until thoroughly cold.
Serve the soup cold garnished with fresh coriander, mint leaves, and if desired, diced mango or avocado.

This soup combines the richness of coconut milk with the acidity of lime, the freshness of coriander and mint, and a touch of heat from green chili pepper. It's a perfect starter for warm spring days, providing both hydration and satisfaction with an exotic twist.
