Hearty Brussels Sprouts and Parmesan Soup

This Brussels Sprouts and Parmesan Rice Soup is a delicious and healthy option for a quick and easy meal . Ingredients :

  • 2 tablespoon extra virgin olive oil
  • 1 medium leek, sliced
  • 15 Brussels sprouts, grated
  • 1/2 tbsp salt, more to taste
  • 1 tablespoon of Italian spices
  • 1/2 teaspoon ground black pepper, more to taste
  • 5 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan, plus more for garnish
  • 1/2 fresh lemon, for juice
  • 2 tbsp chopped fresh dill and/or cilantro, plus more for garnish
  • 1/2 cup white rice

Instructions :

    1. In a large saucepan or casserole dish, heat the olive oil over medium-high heat.
    2. Add the leek, then sauté for about 5 minutes until tender.
    3. Add the shredded Brussels sprouts and season with 1/2 tbsp salt and 1/2 tsp ground black pepper and Italian spices
    4. Cook, stirring occasionally, until Brussels sprouts are softened, about 10 minutes.
    5. Add broth and rice.
    6. Bring to a boil, then reduce the heat and simmer for about 30 minutes, until the rice and Brussels sprouts are tender.
    7. Remove the soup from the heat and add 1/2 cup grated parmesan.
    8. Mix until the cheese is melted.
    9. Add lemon juice and chopped fresh herbs - dill and/or cilantro.
    10. Taste and adjust seasoning with salt and black pepper if needed.
