Hearty Brussels Sprouts and Parmesan Soup
This Brussels Sprouts and Parmesan Rice Soup is a delicious and healthy option for a quick and easy meal . Ingredients :
- 2 tablespoon extra virgin olive oil
- 1 medium leek, sliced
- 15 Brussels sprouts, grated
- 1/2 tbsp salt, more to taste
- 1 tablespoon of Italian spices
- 1/2 teaspoon ground black pepper, more to taste
- 5 cups chicken or vegetable broth
- 1/2 cup grated Parmesan, plus more for garnish
- 1/2 fresh lemon, for juice
- 2 tbsp chopped fresh dill and/or cilantro, plus more for garnish
- 1/2 cup white rice
Instructions :
- In a large saucepan or casserole dish, heat the olive oil over medium-high heat.
- Add the leek, then sauté for about 5 minutes until tender.
- Add the shredded Brussels sprouts and season with 1/2 tbsp salt and 1/2 tsp ground black pepper and Italian spices
- Cook, stirring occasionally, until Brussels sprouts are softened, about 10 minutes.
- Add broth and rice.
- Bring to a boil, then reduce the heat and simmer for about 30 minutes, until the rice and Brussels sprouts are tender.
- Remove the soup from the heat and add 1/2 cup grated parmesan.
- Mix until the cheese is melted.
- Add lemon juice and chopped fresh herbs - dill and/or cilantro.
- Taste and adjust seasoning with salt and black pepper if needed.
