A Deeply Rooted Tradition

Bread and butter holds an important place in family gatherings in the Antilles, especially during communions. It is not just simple bread, but a symbol of sharing, often shaped into a crown or braid and served in the center of the table, accompanied by rich, fragrant hot chocolate.

Unique Texture and Balance

Unlike a classic brioche, Antillean bread and butter is less sweet. It features a stringy, light, and fluffy crumb, capable of absorbing chocolate without crumbling. The subtle addition of vanilla and citrus zest complements the whole without overpowering it.

A Recipe Designed to be Authentic

This version respects the traditional proportions observed in the Antilles: a dough enriched with butter, lightly sweetened, well-kneaded, and slowly proofed. It produces an authentic bread, both in its texture and taste.

Frequently Asked Questions

Can milk be replaced with water?
Yes, some traditional versions use a water and milk mixture, but milk alone gives a softer bread.

Why is my bread not stringy?
The kneading or butter incorporation was not sufficient. The dough must be very elastic.

Can the sugar be reduced further?
Yes, down to 40g for an even more traditional version, especially if served with sweetened chocolate.

Can the dough be prepared in advance?
